Key considerations when selecting fridges, freezers, cold rooms, preparation counters and ice machines for a restaurant.
Start with the menu and workflow
Equipment should match the volume and type of food handled. Consider receiving, storage, preparation, cooking, service and waste areas rather than selecting units in isolation.
Allow for ventilation and ambient temperature
A cabinet that works in a cool showroom may struggle in a hot kitchen with poor ventilation. Confirm the manufacturer’s ambient rating and leave the required condenser clearances.
Choose usable capacity
Gross litres do not always equal usable storage. Shelving, airflow space and food-container sizes affect real capacity. Avoid overloading equipment because blocked airflow causes uneven temperatures.
Consider serviceability and parts
Choose equipment with accessible components, available parts and clear technical information. Reliable local service support is often more valuable than a feature that is difficult to maintain.
Plan preventive maintenance
Budget for condenser cleaning, door gaskets, water filters and periodic service. Maintenance should be part of the purchase decision, especially for mission-critical equipment.
When to call a technician
Arrange professional assessment when equipment cannot maintain a safe temperature, repeatedly trips, shows refrigerant or electrical concerns, or risks stock loss. Provide clear photographs and do not dismantle live or pressurised components.
